Fiber, Fat, Protein Sweet Breakfast

For the girl on the go, this combo of ingredients is easily digestible and packs protein, fat, fiber and smart carbs all in one go. Literally takes less than 10 minutes to make from start to finish. Easy to reheat in an instant.
I'm big on using whatever I have on hand to cook. In this case, I had 2 bananas that were going to go bad soon, and it was around breakfast time. I wanted something sweet instead of savoury, did not want to spend a ton of time making food, and so this concoction was going to work.
I've had a variation of this combo previously, and this time hit the mark the most because - I included flax seed, which is a great source of fiber. These turn out as a "scramble" for me as opposed to pancakes because of my inability to care enough to make a perfect pancake plus- the batter isn't that thick. To me, creating a scramble (the way I do) is more therapeutic. More on that another time. I will for sure share my key to the best scrambled eggs that will be a signature dish you can make that will have people remembering those eggs for days.
Okay, here's the recipe, and of course there are 101 variations. To me, this is simple, fast, satiating and kept me full for a long time.
Step 1. Toss Into Ninja (or food processor) and makes 2 servings:
- 2 bananas
- 4 eggs (you could easily do 6 eggs)
- Sprinkle in flaxseed
- Add in maple syrup (if you wish)
- Could add cinnamon or vanilla extract; I did not add either
Step 2. Heat pan and cook in ghee, coconut oil or butter (all healthy fats).
Step 3. Scramble as you would scrambled eggs or create a pancake (might be a bit runny to do so, in which case, you could add oats, but this would add another layer and more time)!
Serve: top with whatever you like! I sprinkled blueberries and unsalted cashews on top.
**A mistake I made...while scrambling the mixture, I popped Hu chocolate chips into the mixture, and they melted IMMEDIATELY. Not ideal. Perhaps refrain from this step unless you literally want chocolate banana eggs.
**I've made this dish before with just bananas, eggs and chia seeds, and recently, I've gotten away from chia seeds, even though they're a source of protein.
